Peanut Butter sandwiches (no jelly) wrapped in Saran Wrap. Will last 2+ days. Doesn't need a cooler or refrigeration. Make beforehand or also easy to make on the road. Bring a loaf of bread & a jar of peanut butter/or those individual cups they sell. Or at a hotel, eat the hotel breakfast and also make a sandwich from ... a few slices of their bread and they usually offer peanut butter.

This. Look for home style cooking restaurants. Some are really nice.

Ethiopian vegetarian platters. They hold up great in a cooler, and are filling without being too heavy.

You are getting good advice about healthy foods. The cheese (protein) is especially good because it doesn't need refrigeration. However, my big piece of advice is one unhealthy treat that is always popular in our car for kids and parents alike: Pop Tarts. I know they are empty calories but they sure do pick up our gang when we're in the middle of a long day on the road!

I realize you'll be staying in hotels, and that's a whole other thing, but on a recent drive I found that rest stops were the best bathroom stop because they often prop the doors open and are touches and have lower traffic. Bring a few Clorox wipes (or whatever you have) with you to open stall doors, put down TP, and don't use the air dryers. I felt comfortable with this approach.

Are these open? I know some states were closing theirs and referring people to gas stations instead.

Also Baby Bells and single-wrapped cheddar sticks, clementines, apples, and crackers.

I usually make a tub of chicken salad, too. Freeze ziplocs half-filled with water and laid flat before freezing -- put the tub of chicken salad on top of one frozen ziploc and underneath another -- keeps it very cold. Bring some croissants or pita bread and you can make sandwiches in the car.

Safeway makes the best ones.
