Bounce house is a great idea and easy to inflate. The thing that kept both my kids entertained for hours until they were about 4 or 5 was a sand and water table. We had one like this. The umbrella is key to keeping the water and sand--and kids--out of the sun. Highly recommend. My kids are teenagers--yet this is the thing I remember was the most fun.

My 7 year old does it on her own. she doesn’t stake it to the ground, but does everything else.

I would just get a water table and sandbox with cover (two separate things, not a combo), some chalk, some bubbles, and a tricycle with push handle.
