I've read almost everything of his and in addition to the books already mentioned I enjoyed a few he published in the 90s - Bag of Bones, Dolores Claiborne, and Insomnia. On Writing is really excellent if you are interested in his process or are an aspiring writer.

Full Dark No Stars was a great collection of short stories. I usually don't like short stories but I think Stephen King is one of the best authors at drawing you in right from the start. I've had other books where I feel like I have to force myself to keep going until I get hooked, but with his I'm hooked from the get go.

Mr. Mercedes (that one's the best by far but the whole trilogy is pretty good - they're amazing as audiobooks, Will Patton is great)

Another vote for The Stand.

Different Seasons is interesting because two movies generated by it -- Stand by Me and The Shawshank Redemption -- are as close to the novellas as any movie I've ever seen track a book.

I loved 11-22-63 but it's a bit of a departure from King's other books style wise. I haven't read most of the classics since I was a teenager but the ones that stick out to me are The Shining, Salem's Lot, and Needful Things.
