you can blanch and freeze them.
add them to minestrone soup.
personally they are my least favorite vegetable but the recipes here sound pretty good--maybe I will swap another vegetable and try them!

They are actually quite good roasted. I drizzle on some olive oil and a bit of garlic salt and roast for 18-20 minutes. I’ve made a whole dinner out of that.
Also try topping with some fried onions.

Southern style:
Saute in olive oil and bacon. Throw in some onions. After they cook a few minutes stirring, throw in water to about a half inch above. Cook and cook and cook for about an hour on medium. The beans should turn olive green. Watch that they don't burn. Put more water in if necessary. Serve with a mixture of chopped tomatoes and raw onion.
This works best with roma beans--the beans that are a little flatter than other green beans.
My favorite.
