Compromise and help your new nanny excel! a) make the purees yourself, I know it's one extra thing on your plate, but it's not super time consuming! and b) ask your new nanny to read X number of books to the baby each day.

Not everyone can/wants to make purees. How about Dad or Mom make purees on the weekend and freeze them for nanny to use during the week?

Do you talk to your nanny about these things? Some parents do not want their children eating spicy food. Some parents do not want their kids going to certain parts of town or on the metro, etc. Maybe your nanny's last employer was like this.

You need to communicate clearly.

Your former nanny used to make "purees loaded with herbs and spices."

FYI, this seems like a cultural thing--what you feed babies (purees vs cereals vs baby led weaning-style) and whether you put spices nad herbs in children's food.

NP. 11:48 was rude, but essentially correct. We kept our nanny on after our 1stborn started part-time preschool at great expense, because we were pretty sure we would be having a 2nd kid in the near future, and didn't want another nanny other than the one we had.
