Personally, I treat others how I'd like to be treated. When I go out I always tip more than less. Being stingy doesn't look good on anyone especially when you're otherwise spending money left and right.
Sounds like this family just isn't a good fit for you anymore OP. When I babysit, even when I'm paid through a transfer or cash app, most people round up quite a bit. You could also start getting paid through one of those apps and you can send payment requests for exactly what you're owed. No rounding up, but at least you know you won't get shorted.
