If the latter, do a brownie mix or buy something. If you do brownies, buy a roll of parchment paper and cut a strip to fit the bottom and sides of your pan (as in, if it's a square pan you can have two sides with nothing, the bottom covered, and the same piece coming up over the two sides. It might sound fussy but it is fully worth it because you can just slide a knife along the two uncovered sides, pop the whole thing out to cool as if it were a cake, then it's much easier to cut it up and package the slices for the bake sale.

This is a really good brownie recipe that doesn't require a mixer if you're willing to fuss with melting the chocolate. To really do it right, get nice chocolate "chips" from the cheese section at Whole Foods (might be Callebaut or Valrohna), like maybe a 70% or even 55%. You can do the chocolate and the butter in the microwave but just do it slowly and carefully because chocolate "burns" at a pretty low temperature and then it's ruined. Don't microwave until it's all melted - just keep taking it out, stirring it and letting it sit for a bit to see if the residual heat is enough to finish it.

One of the best sellers is always the cupcakes made from package mix with icing from a tub covered in rainbow sprinkles. Basically, anything you can cover in rainbow sprinkles sells well.
I used to make from scratch food stuff, but have learned to give the people what they want. They want rainbow sprinkles.
Tollhouse cookies also sell well.

I had a Brazilian au pair once who made brigadiero for all of the kids birthdays. They looked so special, but were really pretty simple to make. Since then, I make them fur everything. She always rolled them in chocolate sprinkles, but we would roll them in anything from bright pink sugar to crushed nuts.
