They already effectively do have two different menus because every day has a vegetarian option as well as a meat-based option (which also provides an alternative for those who don't eat beef). But that aside, you're talking about a preference as opposed to a religious mandate. Just because culturally someone might prefer pork doesn't mean they can't eat something else.
