I do this frequently. Rice wine vinegar is awesome for this—makes it like the cucumber salad at Thai places.

Easy side dish: thinly peeled and sliced cucumbers with thinly sliced onions. Mix about a third cup vinegar with a third cup sugar. Add water to make a cup. Pour over cucumbers and onions and put in fridge.

Also sheep and/or goat’s milk ricotta with heirloom tomatoes, EVOO, Maldon salt (inspired by 2Amys)
and the arugula with tomato raisins and lemon vinaigrette salad in Batali’s Molto Gusto cookbook

Just made a “Mexican Street corn” salad:

Black beans
Corn (3 ears, cut off the cob)
Halved cherry tomatoes
Cubed queso fresco
Cilantro
Generous salt, chili powder, cayenne & cumin

Will serve in halved avocados, with a squeeze of lime juice, and a creamy cilantro dresssing

Cubed tomato, cubed avocado, chopped basil, lemon juice, olive oil, sea salt, black pepper

Watermelon, avocado, red onion, raw corn cut from cob, mint, feta, lime jiuce, olive oil. Add sliced fresh jalapeño if you like spicy

Tabbouleh or similar made with quinoa

Finely chopped kale massaged with sea salt, olive oil, apple cider vinegar. Add diced red onion, chopped apple, pumpkin seeds. Add goat cheese if you desire.

Shaved zucchini or zoodles with corn off the cob, feta or goat cheese, and halved grape or cherry tomatoes. Toss in a dressing of 1:1 olive oil and lemon juice (or white wine vinegar) with a generous sprinkle of salt.

'Forbidden' (purple/black) rice with pineapple, bell pepper strips, and spicy dressing (lemon or lime juice, olive oil, chili flakes or Sriracha).

Finely chopped spinach, cucumber, carrots, sunflower sprouts, sauteed and cooled yellow zuccini cubes, thai basil, minced ginger, peanuts, green chillies. Tossed in vinegar and sugar dipping sauce. Top with a poached egg.
