Check out this website!
https://sleeps5.com Profiles hotels in NYC and other large cities that can sleep five or more to a room.
We are also a family of five and have stopped staying in hotels except for a single night here or there. It's AirBnB or VRBOs exclusively for us now. Kids are 9, 12, and 14, and sharing doubles/queens and squeezing into a single room just doesn't work for more than one night.

OP here. Thank you for all of these suggestions. Lots to check out!
For those who bring a sleeping bag for one of the kids, do you disclose to the hotel? I seem to recall a hotel telling us that they couldn't allow it due to fire codes.

Tryp hotel in midtown. We once got placed in a "family" room during a lull in the off season. It had a bunk bed, two full beds, and a pull out sofa. More of a suite really. Also, the hotel is very cute and super clean.

In our family we do 1 room with 2 doubles and then bring a self-inflating twin air mattress. So I just do the search for 4. But if we go to a hotel with a Concierge floor then we disclose the extra person to get the breakfast allotment increased.

You might consider hotels or AirBnB's in places like Brooklyn, Jersey City and Queens.
Parts of Brooklyn, especially, are really nicer than most of Manhattan these days.
