Some will depend on your own interests/preferences. We rented an apartment in the Marais/4th Arr in Paris, loved the neighborhood and the Saint-Paul metro was really convenient. We rented an apartment just outside of Piazza Navona in Rome, near Campo de' Fiori. Enjoyed that neighborhood and the convenience of it as well.

From Bayeux, you can stop in Deauville as well, before heading back to Paris.
There's not much to see in Bayeux, I'd advise you to go back to Paris as soon as you can after the wedding.
