McGill was great for me, although it's a big school. In my case, a graduate degree in a small but very prestigious department was great, though I would not have thrived as an undergrad there. The sheer size makes for a very high reliance on Teaching Assistants for many of the intro classes. Not all that different from a State school.
Montreal is an amazing city, and has a very rich and international culture. It's very much a lifestyle city rather than an economic powerhouse.
McGill is one of Canada's best known universities, and has many famous grads who changed the world. This is the School of Pierre Trudeau, Leonard Cohen, a couple of Nobel winners, etc. Very well regarded internationally.

Even though McGill's classes are taught in English, are there opportunities to speak/improve conversational French in Montreal outside of the school's French department?

Duh! Montreal is part of Quebec. Most people there speak English with an accent. Talking in french to locals should not be a problem.
