OP, I have no idea why people are being such assholes.

I'm in a similar situation. My friend has always been gorgeous and hasn't changed her appearance, but she's said before that she and her husband are basically friends and co-parents (she respects him but doesn't think of him romantically). She talks constantly about a guy at work, and once I saw her text him "ilysm" (which I had to google but apparently means "I love you so much). Sure, it could be in a friendly way, but I have suspicions.

Think I need to MYOB though. if she wanted to say it, she would, and if I accused her and it weren't true, it could ruin our friendship.

Does she seem happy, or “off?” Maybe she just got tired of carrying the extra pounds and decided to make a change for herself, and one thing led to another (better diet and weight loss often leads to more energy).

Just say you've noticed such and such about her and that you wanted to tell her that she looks amazing! She won't suspect that you're fishing, but may be dying to confide in someone, and that may open the door.
