Eggs. Scrambled, poached, boiled, made into a frittata or quiche. One egg over easy on a bed of wilted spinach is deeee-licious and very filling.

Avocado toast! Just smush a ripe avocado on good, whole grain bread. Sprinkle with good salt and pepper, red pepper flakes if you want some spice. Easy, delish and healthy!

A meal / side / snack my whole family loves is something I cal soithwest mix-up

Cube and roast sweet potatoes with a tiny bit of oil and salt and pepper. Toss with black beans. Add cumin and lime juice to taste.
Add other things in the house into the mix or let people add their own toppings -
Shredded chicken, avocado, cojita cheese, yogurt or sour cream, bell peppers, tomatoes, baby spinach, cilantro, too with a fried egg. It’s just a great staple to riff on. It’s vegan, GF, whole 30, etc. and each person can make it their own.

Curries!

I browned 1/2 an onion in a tablespoon of olive oil, and added about 1/2 tbsp of curry powder to brown.

Then added 1/2 chopped head of cauliflower and 1/2 can garbanzo beans.

Then about a cup of Rao's marinara and maybe 2 cups of crushed tomatoes.

Let it all simmer for about 15 mins. Season to taste with salt, pepper, and lemon juice or vinegar.

I make oatmeal and add egg whites to it to give it a boost of protein. Eating that for breakfast easily keeps me satisfied until lunch.

Ground turkey mixed with pretty much any sauce from Trader Joes, served over quinoa or brown rice, and a bag of microwaved frozen veggies on the side.

(I mix the veggies into my serving of turkey/quinoa for a one-bowl meal, but DH and DCs like to eat everything separately.)

Tonight I browned up the turkey, drained it of fat, and then mixed it with TJ's Indian simmer sauce. Not a ton. Just enough for flavor. Last week it was TJ's red Thai curry sauce. Other weeks I've done taco sauce. It's always good.

Chia seed pudding for breakfast or dessert!

There are a zillion variations on-line. This is one of my favorites for breakfast. I make it with light coconut milk (canned) and a bit of stevia instead of syrup/honey:

You can also make super simple versions without using the blender. Just dump a bunch of chia seeds, coconut milk (or almond milk or regular milk), and cut up strawberries in a container with a lid and shake. No need for added sweetener. The strawberries do it for you. Put in the fridge overnight, and you're all set the next morning. (I've found that exact measurements don't really matter. I always like whatever version I slap together. Sometimes a tiny bit of salt on top makes the flavors pop.)

Not a recipe, but eggs. I have scrambled eggs instead of a sandwich for lunch most days, and I think it's contributed a lot to my (very slow) weight loss. I'm doing Weight Watchers, so even better now that eggs are 0 points.

Chili with beef or turkey and black beans. It’s very filling, and has a lot of protein and fiber. The beans and tomatoes are canned. It only takes a few minutes to put together.
