Do not offend these people, OP, and go with the flow.

But I'm 31 and go on several fancy girls trips a year for bachelorette parties. They're super fun and we love getting ready together.

To me that would be worse. I would rather have my own room, or share with one other in a $300 night hotel than cram 4 or more to a room in a $1K hotel,
How many people are we talking about and what city are you going to? Maybe we can help you think og a way to stay somewhere nice without breaking the bank.

1. Don't go on this trip. Take your friend on a splurge trip separately.
2. Ask what people are willing to pay (max), and then offer to book at a place where you can supplement. Tell them you're using points or found some great deal.
3. Choose two hotels in close proximity. A nice hotel next to a crappier hotel. Say people are welcome to book in either hotel, and you'll all meet up for excursions.
Honestly though, if you're having trouble with accommodations it sounds like this trip is going to be a pain all around. I hate girls trips.
