Sometime +/- 3 days of me, a white guy would go to the same place with virtually the same background information. We would both take the tour, talk to the agent, request an application and leave. We would then have a questionnaire and write up about the experience to see if they were appropriately applying the fair housing laws. Out of about 10-12 visits, I think we only found one glaring case of an agent who just didn't like Asians (or non-whites).
Two of the most interesting anecdotes so far.

Sold individual waters outside sporting events for $2 ($4 inside)...a case of water netted $45, would sell 3-4 cases usually in about an hour.

Churning credit card offers. I'm about to get $500 of travel expenses reimbursed.
At one point I churned bank account offers but with they've made that significantly more difficult to do now that it's not really worth it to me. Plus most banks will give you a 1099 for the income.

I did a lot of clinical trials when I was in college. I would get $1100 or so.
I sold plasma. It was an extra $60 a week that I really appreciated and I could just study while donating.

Not quick, but I've donated eggs a bunch of times. (although, it was really rewarding to help people, not just because of the money)

I did online gambling (when it was legal). There were lots of reputable online casinos that would give you $100 if you deposited $100 (or a similar deal), but they would make you bet a minimum amount before withdrawing the money.
I followed a strategy card to play the game with the lowest house odds (blackjack) and kept a spreadsheet to know when it was ok to withdraw the remainder. Start with $200 ($100 of which was mine), withdraw about $180. Paid my rent in grad school for a summer that way.
