Yeah. I'm confused about Paltrow. She was born into a fabulously wealthy family, attained fame and wealth on her own as an actress and instead of retiring she is now running a company promoting wellness. Why? Sure its not money.

This. Many of these celebrities have multiple homes and expensive hobbies and tastes. And they probably don't want to give that up. Also, they have high expenses - such as their agent, accountant, security, clothing, taxes.
Of course some celebrities do just walk away - like Gene Hackman, Greta Garbo.
Off topic, but I didn't realize Gene Hackman had retired from acting and was now writing. I thought you'd gotten the name wrong since Gene Wilder did something similar. I can think of quite a few big names who stepped away from acting (e.g., Doris Day).
