I do this. I used to color + highlight and it was killing my hair (and time and budget). Now, I am growing out the overall color and just getting blond highlights. I like it. One problem I have is that because my hair is about 75% gray and 25% brown, the blond blends in with the gray well, but not as well the brown. So, the re-growth where the gray is coming in after the blond looks very natural (the contrast isn't as much) vs. where the gray is coming in after the brown (where there's a greater contrast). But, overall, the contrast in re-growth is less than when I colored AND highlighted.
I don't mind people knowing there's some gray. I think at my age, 50, it looks a bit unnatural to have zero gray. More importantly, re-growth of gray + brown looks silly given it's impossible to perfectly match the brown... so I was winding up with 4 colors: the highlights, color - and then at my roots, gray and brown.
Basically, I'm eager for 100% gray so I can just get blond highlights (or maybe I'll even leave some gray areas behind and mostly dye). I do have mostly gray in the front and with blond highlights I think it looks good.
No searching for the gray hairs to highlight (OP, your new stylist was searching to - what, color every gray hair?!).

Single process is definitely easier and cheaper. It also looks like you applied shoe polish to your head.
Not with a good stylist and high quality color.
I have a good stylist who uses high quality color. You just can't get any dimension if you are coloring every hair the same color.
