I go to both Disneyland and Disney World with my gf's AT LEAST once a year. No kids, no significant others, just us. It's a blast! You'll love it!

Yes!
I highly recommend you go before you have kids, because that will be the one + only time you will actually be able to see everything and fully enjoy it.

At Disneyworld, Epcot would be a huge draw. Kids wouldn't be so interested...They would want the Magic Kingdom and Animal Kingdom.
The Hollywood Studios would be a great experience too!
Just to warn you:
Go to Disneyworld in the winter if possible.
I went during Spring Break and the crowds + humidity made it all seem like a punishment vs. a vacation.

My husband and I don't have kids either, but we still go. It's a nice vacation, if you plan it well. Make dinner reservations well in advance (Narcoosee's is a nice escape for adults) and don't expect to see it all on your first visit. I would recommend taking long afternoon breaks, either swimming or napping- at the height of the heat and the crowds.

Disney does "fake" really, really well. It is fun.

Go for one of the separate ticketed events like the Very Merry Christmas party and stay late and enjoy the short lines and special treats. It is really fun as an adult.

It was decades ago but I went at 13 with my 16 year old sister and mom. We could do fancy sit-down restaurants, stay up for fireworks etc. It was fun even though we weren't little. That said, I personally would choose a different vacation but it all depends what you like to do. Rides are necessarily a way I like to spend vacation.
