If OP's 3 year old is in preschool or daycare, the baby is already being exposed to a lot!
DS loves some of the Disney characters, although his favorites (Cars and Planes) I don't think have the best showing at WDW. He has seen Frozen and was unimpressed, although he used to be really into Mickey Mouse Clubhouse so would probably enjoy seeing those characters.
