i usually book rooms online either via the hotel's website or Expedia or Booking.com. I always put the request for adjoining in the comments and I also email separately and repeat the request. I find emailing is better than calling because then you have a written record of whatever response you get. No hotel will guarantee adjoining rooms, but if you book early enough and you also highlight your request at that time, they are much more likely to accommodate you. We have always gotten them when we asked, but I've also usually reserved well in advance.

I believe it is "legally" 18---but I would feel comfortable letting my 16 and 14 year olds share a room that was not connecting with my own. I also have a 11 year old and a 9 year old, and I would not feel comfortable with them doing it--even if they were with their 16 or 14 year old sibling. So for me, the answer would be somewhere around 14 years old--but of course it would also depend on the specific child.

We always get connecting rooms. I call ahead or email to make sure they have connecting rooms and what type connects to what type. I book those types of rooms. Then I call and have them out the note on the reservation. Then I always call the day before or the morning of and make sure they have blocked the connecting rooms for us. It is a pain but we almost never have a problem. If I fail to call all this etimes, we are WAY more likely to have an issue.
