+1!

Or I would make moroccan meat balls or something similar. Switching in a couple of unusual spices is really all you need (add cumin, corriander, some cinnamon and a little smokey paprika)

I really love this cheeseburger pasta recipe and it only uses one pot.

Also, what about enchiladas?

+1 My picky kids love this recipe (I leave out the red pepper so it's not spicy and serve the green onions on the side) - http://damndelicious.net/2013/07/07/korean-beef-bowl/

We make it often, but I hate how much sugar the recipe has so we cut that in half

Yes, forgot to mention that, I cut the sugar in half too!

Meat pies. Use tiny cupcake papers and place the pastry dough. Add an egg for savory crust. Brown ground beef with tiny pieces of minced onion, salt , pepper, bit of worsteshire or HP sauce. You can add some tiny cubes carrots or potatos.

The same meat mixture can be used for beef biscuit rolls. Flatten the dough for biscuits. Spread the meat and roll it up. Looks like cinnamon rolls.

Slice zucchini and bake it with the same type of ground beef mixture on top-sprinkled with parmesan.

Also stuffed peppers.

You get bonus pots for correct usage of cottage pie. Incorrect usage of Shepard's pie is a personal pet peeve (yes. ridiculous. I know. Can't help it).

Dirty rice (Zatarains). It really is not that spicy but if you would prefer something less spicy you could use their Spanish rice or another flavor instead.

Stuffed peppers.

Enchilada Pie! Something like this: http://allrecipes.com/recipe/233570/spicy-beef-and-bean-enchilada-pie/
I can’t eat red enchilada sauce, so I use mild verde sauce instead. It is not spicy.
