The two ovens under the 48 range are plenty. We use the smaller oven almost every day and the larger oven when making bigger things or for parties, etc. You will use the small oven more than you would expect and the big oven holds a ton!

if you don't do two ovens in the custom build, you probably want to identify where second one could go when you sell. In my current setup I have a gas range + oven and an electric wall oven. In my future kitchen I will have the same. I find I like gas better for meats, but the electric wall oven is amazing for baking. Also, it's really handy to not have them right on top of each other. Current microwave is on the counter, future will have it in the pantry, we just don't use it that often.

Basically, if someone entertains a lot, two ovens are critical.

We're planning on doing a 48" range top. Should we get a double wall oven or is a single oven (paired with a built in convection microwave) ok? We would hardly ever need a second oven, but for resale value is it odd not to have a double oven? This is for a custom build.

Now just deciding between placing the microwave/convection oven in a cabinet cubby, or getting an "over the range" microwave/convection but not over the range, just under a cabinet. Had been thinking about a drawer but I don't think they have drawer microwaves with convection or speed cook.

Get the over the range over the countertop, more cost effective to replace and much easier to do so. Drawers are interesting but aren't as easy to open and close.

We are most likely getting Wolf for the Oven and warming drawer and Monogram Advantium for the Microwave because there is really nothing else like it.

Yep, Advantium is awesome. Are there really no other microwave units that compare? What do you use a warming drawer for? And so you think 3 ovens is a good idea / necessary?
