For about 8 months out of the year, it rains at least 5 times per week. Sometimes only for 10 minutes, other times for as long as an hour or two. It is very hard to avoid the rain in Orlando (my parents have lived in Orlando for 30 years, so I've been there a lot).
When we go to Disney, we always bring ponchos and umbrellas in the one backpack that I carry for the family. Additionally when we rent a stroller, I rent from a place that includes a rain cover for every rental. We have had times that we put the kids in the double, put the rain cover on and then soldiered on to the next location with us in our ponchos. We also have ponchos for the kids if we park the stroller and walk. The good thing is that it's usually pretty warm when it rains so not such a big deal to be walking out there as long as you have a cover up. Nowadays, there are many attractions and restaurants with indoor space at the parks, so there's usually someplace to run into if you need. We check the daily/hourly weather report and we try to shift lunch to be as close to when the highest chance of rain will be. We've managed to stop for lunch quite often during the daily rain showers.
