Subject: Fruit and Vegetable Challenge
Make chopped salads or slaws to keep on hand for side dishes or snacks. I like diced apples with celery in a Dijon vinaigrette as a breakfast side. For lunch, broccoli slaws (or broccoli/kale blends) work well with apples/grapes/craisins, & nuts; to make it a meal you can add chicken and goat or blue cheese.

True. You can put a pound of spinach in a pan and eat it in three bites and be like I ATE A POUND OF SPINACH!
