The Christmas party will definitely be going on. I have tickets for one in early November ( I think the 10th?)

Nobody gives Epcot enough credit! In November, if the Food and Wine festival is still going on, the adults will be happy. The kids can do the scavenger hunt (even the teen will like that). The Nemo ride and Crush (turtle from Nemo) interactive thing are both great for the younger kids. If you can, get reservations to eat at the Akershus restaurant with the princesses, which is in Norway.

AK was not that exciting for my kids. They go to plenty of zoos and were too small to ride the major rides there, so it's not somewhere I'd go again until they are much older.

OP Here - While this is DD's first trip it is by no means her last. DH and I are planning on taking her early 2017 (she'll almost be 5) during a very low time and spend 4 full days at the parks (where we will get a hopper option). We didn't pay for the trip so again, no hopper option (not do I honestly want to attempt to hop between parks during the second most busy time of year).

Young kids are very into Disney Jr so we will do Hollywood Studios.

I would do two days in MK instead of one.

If you want to hit all four, get a park hopper ticket. You can spend one morning in Hollywood Studios, take a break and then go to Epcot in the evening. You spend on morning in Animal Kingdom, take a break and then go to Epcot in the evening. You spend one whole day at Magic Kingdom.

This really a matter of taste. When my kids were small, they loved Hollywood Studios (the Playhouse Disney stuff is there, as is the Toy Story and Indiana Jones and Star Wars stuff). They also loved Epcot because they liked all the shows in the World Showcase and they liked the space to walk around.

Magic Kingdom was their least favorite, by a lot.
