Recipe for oatmeal pancakes:
1 3/4 cup of oats (I use the quick-cooking variety since the rolled oats are already chopped)
1/2 cup of flour (I use whole wheat)
1 Tbsp sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp salt
2 eggs
2 cups of buttermilk
Mix dry ingredients and then add eggs, buttermilk. This makes quite a few. I cook them all and freeze the leftovers.
Recipe for pumpkin pancakes:
1 1/2 cup of flour (whole wheat)
1 Tbsp brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp salt
1 egg
1 1/2 cups of buttermilk
1 cup canned pumpkin (I feed the leftover in the can to my dog

)
1 tsp vanilla
Mix dry and then add wet ingredients. Freeze leftover pancakes and put in toaster to reheat.
