I'd definitely cut the other stuff in advance though!

You can prep the onions (peel the skins off) and cut it before you use if you are that sensitive to smell.

+ 1. I usually peel the onions, put them in ziplock bags and keep in the fridge for daily use. No smell and no tears when I have to cut them.

My cleaning lady will chop a huge Costco sized bag of onions for me and I keep it in a container in fridge (or ziplock). The trick is to wrap the whole container or bag with cling wrap a few times to prevent the smell from escaping. It is perfectly ok to cook with cut onions and peppers that has been on the fridge the night before or even a couple days.

Cleaning ladies will do food prep?? While they are there to clean? Or do you call her back on a different day of the week to do food prep for you?

This has never been a problem for me and I cut up veggies the night before Thanksgiving all the time. I keep the onions in a tight container and cannot smell them, and I have a heightened sense of smell.

I chop an onion, put it in a container that was originally for sour cream, put the lid on, then put the container in a bag that was originally for bread, then put it in the vegetable drawer. Despite all those steps I can often still smell the onion when I open the fridge, but that is okay.

You can buy a bag of frozen chopped onions and green pepper blend at Giant. I keep some in my freezer so it’s always convenient. I probably wouldn’t recommend it for salads because the texture might be off, but when cooked, it’s fine.

You can cook them the day before and reheat when needed.

I’d do that vs cutting/storing and then cooking the next day.

I only buy sweet onions and have kept chopped onion in my fridge before without issues; however, last week I prepped a couple Ziplock bags of diced onion for several dishes I was making and when I opened the fridge the next morning the smell was overwhelming. They must have been stronger than the onions I normally buy because I don’t usually cry while chopping onions and these two onions had my eyes stinging and burning and tears running down my cheeks.

Pepper is fine. Salt will make it weep and lose water. It will get a bit soggy. Though, how difficult is to season with salt and pepper while you are cooking it?

I put cut onions in the fridge all the time with zero issues. If you're that concerned just pop them into the freezer. You can cut/chop and freeze all you want!

You can but why's it taking you so long to cut up onions and peppers? Unless you're doing a ton of them it takes under a minute.

If you can buy them cut up, you can precut them. And chopped onions can be frozen - you can buy that too.
