I used to make this all the time:
-slather a pita with hummus
-top with sliced cucumbers
-then add sliced cheese
-bake until the cheese melts

But my new go-to is even simpler: toast a slice of good bread. Add mashed avocado and a shake of salt. Yum.

I love mushroom/onion sandwiches. So yummy!

Caramelize 1 sliced onion with 1 sliced portabello mushroom and 1 tbsp fresh thyme in 1 tsp olive oil.
Toss 2 c. of arugula with juice of 1/2 lemon and 1/2 tbsp. olive oil.
Spread baguette with dijon mustard.
Sprinkle with blue cheese crumbs.
Spread handful of arugula on bread.
Top with onion and portabello.
Indulge!

DH likes his with grilled steak slices and no cheese.

As a kid, my favorite sandwich was canned tuna with gobs of miracle whip and crunchy cheetos on white bread.

Now: toast wheat bread with lots and lots of seeds in it. Mash an avocado and spread 1/2 on each slice of bread. Salt the avocado copiously with celtic salt. Get a huge handful of alfalfa sprouts (should be at least 1" thick on sandwich) and place in the middle.

My faves (I'm vegetarian):
- cream cheese or avocado sprinkled with salted sunflower seeds and black sesame seeds. DS likes it too with a dash of Old Bay

- rustic bread with ripe, in season tomatoes, drizzle of flavorful olive oil, sea salt (open faced)

- spread one side w Dijon mustard and melt cheese. Add tempeh bacon and thin shaved Brussels sprouts that have been barely dressed with lemon vinaigrette.

- homemade tofu salad with pickled raisins

Bread, turkey, arugula, cheese (I'm on weight watchers and use laughing cow light creamy Swiss) and some balsamic vinegar. Yum!

Avacado, salami or pepperoni, and heart of palm. On homemade white bread. Rye is also good. When tomatoes are in season add a slice. My all time favorite sand which.

I do grilled herb and tomato sandwiches. My grown up version of a grilled cheese. Hearty bread, brushed with olive oil and thyme on the outside, low-medium heat. Inside, any kind of cheese. I like havarti or muenster. I add a couple of thin tomato slices, a little salt and pepper, sometimes fresh cilantro. Sometimes hot pepper flakes.

These are best when tomatoes are in season and local. Yum.

Remember that young woman who was making a sandwich everyday for her boyfriend/fiance? Well, according to her blog she's 50 days away from being married to him--her blog is beautiful and has amazing sandwiches

A good wheat or multigrain bread with muhammara spread on both slices, with sliced avocado and chicken breast or good deli turkey sandwiched in the middle.

Toast half a bagel of your choice. Poppyseed for me.

Deeply drizzle it with high quality flavored olive oil. I love blood orange infused.

Hummus. Fresh, flavorful tomato. Touch of salt and/or pepper.

Alternate is same approach but with flavorful cheese, bacon and tomato. No hummus.

It's all about the bread so I buy pre-made pizza dough, cut off a piece, and bake a flatbread on a pizza stone. After that, it is hard to make a bad sandwich. My favorite is to warm up some turkey or ham and brie and use some honey mustard or possibly sriracha mayo. A little lettuce and red onion is good too.
