And did big meal for lots of family one year where I brought Peruvian chicken home, made Mac n cheese for kids and potato salad and black bean and corn salad for grown ups

Got lots of raves and simple since I pre. Made the salads

I have a very simple pasta dish. Cook pasta al denete. Reserve a bit of the cooking water when draining. Add goat cheese, cherry tomato, black olives and whatever veggies you like that don't need cooking all the way (canned artichoke hearts are great) and the reserve water and stir dry until all heated through. Very simple and delicious.

I've also done Salmon bakes with a marmalade (lemon or orange) spread on top. along with rice and salad.

Salmon... a nice large piece is so beautiful on the table. Pair it with a some couscous or a lightly dressed pasta salad and green leafy salad with a homemade vinaigrette. Delish.

For dessert? Angel Food cake with fresh fruit.

Oh... and wine. Definitely wine.

Roast chicken-- I'll do 2 if there are more people.

Salmon with BFC asian sauce (essentially soy sauce/mustard/olive oil/garlic). BBQ salmon.

My family is pretty casual, but I'd do something like:
- Roast chicken with a tray of roasted broccoli
- Lasagna (made in advance)
- Grilled steaks and mixed veggies (zucchini, red onion, bell pepper)
- Roasted salmon and asparagus
- Beef stew meat, long-braised so it's really tender, thicken the stewing liquid with flour or cornstarch into a kind of gravy, serve over brown rice. Simple, but a big hit every time I make it.

I'd add a salad to any of these.

We also grill--family pack of marinated chicken breasts plus mushrooms and peppers. Serve with some kind of grain or bread.

Not OP but using context clues, I'd say they are snobby about Mexican food. You know, because Mexican food is hideous here but very good on the left coast.

Op, I would grill, grill, grill. Grilling ideas:
flank steak and spring onions, serve with a salad and roasted potatoes
chicken in soy vey (love this, I saute frozen wontons and peapods on the side)
salmon in evoo, s/p and lemon on a cedar plank - grill aspargus on the side and make a near east rice packet
shrimp on skewers marinated in evoo, s/p and red pepper flakes - make linguine and a salad on the side
turkey-feta-spinach burgers, with cole slaw and corn

Omg opening them up the the beautiful thing that is Peruvian chicken and then sending them on their way would be cruel.

I think she meant they are snobby about Mexican food, not snobs in general.

Grilled lemon pepper chicken and shrimp, foil packet potatoes on the grill (thin sliced potatoes, sliced mini sweet peppers and fresh jalapeño, fresh basil, salt and pepper and olive oil/ throw it all in a foil packet and put it on the grill for 30ish minutes), corn on the cob, caprese salad.

Chicken under the brick, salad.

Flank steak, sweet potato fries, creamed spinach.
