I broiled butterfly pork chops, made ranch baby red potatoes in the crock pot and did a new asparagus recipe. Pretty tasty!

Martha Stewart kale and cannellini bean soup with good bread. Don't know what my kids will eat yet! Not so into kale...

^^ and sometimes in the winter I add cream or half and half to the soup to make it creamier. Didn't do that tonight.

Not really. I play it by ear without exact amounts. Thankfully my kid loves it.

I sautee some onion, carrot, celery and parsley in olive oil AND probably too much butter.
When it's about ready for the liquid I season with salt, pepper, garlic, thyme, about 1/2 tsp each of turmeric and paprika, and the juice of half a lemon.
I add chicken broth (and sometimes water to extend it) and cubed fresh or thawed chicken. Simmer an hour or a few hours on very low temp.
20 minutes before we eat, I add egg noodles and a handful of thinly sliced red pepper strips.
Serve with fresh parsley on top, another a squeeze of lemon, and crushed red pepper flakes (adults only in my house).

Nice with simple green salad (just lettuce, some leftover red pepper strips and balsamic vinaigrette) and fresh bread and butter.

Pasta night for us. That means regular old spaghetti for DS, some linguini with shrimp and lemon for me, and crusty garlic bread and salad for both of us.

I do that too. But tonight I'm just boiling spaghetti and microwaving a meal. Lazy.

Why are you clarifying that the "wee people" won't be drinking wine? Goes without saying, wouldn't you think?


And if I hadn't qualified it, half the posters would be screeching about giving kids wine, even though it was obvious. Why must every thread turn into a nasty, pick apart session?

DH just left on a business trip. So, without him to worry about, I'll just make quesadillas. Kids like salad so I'll wash some lettuce and drizzle a little soy-citrus dressing on top. Done.

When DH is gone, I might not even cook at all. Sometimes just popcorn, yogurt and apple slices.
