Depends on your data plan. If you are worried about data or slow connections, download at home first using the podcast app.
If that's not an issue you can stream them through their websites, the apple podcast app, or Stitcher app and play them through Bluetooth in the car or through a portable Bluetooth speaker for your car.
my phone connect to my car via an audio cable so I play it on the car speakers through that.
i typically download onto my phone to avoid pauses in streaming.
