We're also trying to eat less meat. I need to limit carbs, and DH has IBS and is sensitive to beans, so we have to work around some limitations.
Gado gado (Indonesian salad with peanut sauce) is a great meal. It can be made in a number of different ways.

In it's simplest and easiest form, I defrost pre-chopped and pre-cooked vegetables. (I've been doing collard greens, french cut green beans, and a little sweet corn.) I add this sauce. (I had to create a non-spicy verion.) It sounds strange but it's a delicious tangy peanut sauce:
1..5 cups salted peanut butter (a 16 oz jar)
1.5 cups water
.5 cup ketchup
.25 tsp garlic powder
.3 cup vinegar
Simmer and stir all ingredients until smooth.
