We felt HS was lacking. Son loves Star Wars and what was offered related was lame imho. He didn't complain. We loved Animal K and ran out of time here and left with things undone/unseen.

DS, 7, is not into movies or thrill rides. We didn't bother with Hollywood Studios. He loved his 2 days at Magic Kingdom, wished he'd had more time at Animal Kingdom, and found Epcot a little meh. He liked the tour of countries, but it was a long slog and not as much fun per sneaker mile as MK and AK.

I'd spend one day at each of the two parks you mentioned and a day by a fabulous waterslide pool at the hotel.

What does CGI mean?

Definitely go to Epcot, OP. Animal Kingdom is fun, but won't take a day. If you only have three days, you should consider upgrading to the park hopper. Then you could do 1/2 - 3/4 day at Animal Kingdom and revisit Epcot or Magic Kingdom.

Animal kingdom is good, and has good shows. I'd pick between that and hollywood studios rather than a second day at magic kingdom. Epcot definitely worth it at that age. Disney has a lot of rides that are not traditional roller coasters--more CGI. OP, would your kids enjoy those?

I agree with the previous poster's recommendation of one day each at Magic Kingdom, Epcot, and Animal Kingdom. You could also easily spend 2 days at Magic Kingdom and 1 day at Epcot.

I disagree with all the people saying HS isn't worth it. No, it's not heavy on rides but it has some fun shows and the fireworks show - Fantasmic is phenomenal.

I'm the poster you quoted. It's not that HS isn't worth it, it's just that given the OP's description of her kids (not into Star Wars, not into big roller coasters), I think the other parks might be better choices. Aside from Toy Story Mania and Star Tours, there are the big rides (Rock N Roller Coaster, Tower of Terror) that might not appeal if you're not thrill-seekers. I do agree that if the kids are into shows, Hollywood Studios might be worth further consideration.
