I, too, adore roasted veggies. Here are a few other ideas, though:
stir fry diced garlic in sesame oil for a min or so, then add green beans and stir fry another min, then add a splash of water and cover and cook for 3-4 min, then uncover and add a splash of soy sauce and stir fry 1 more minute
corn on the cob (you can even buy the cobs frozen in winter) with butter, salt and a squeeze of lime juice
bake a sweet potato wrapped in tin foil for 45 min on 350 degrees, then open and rough mash with a fork, add a little butter and shake of cinnamon or maple syrup
salad of diced tomatoes, cucumber, and red onion, tossed with evoo and lemon juice - you can add crumbled feta to this
steamed green beans rinsed in cool water, then tossed with cherry tomatoes and balsamic salad dressing
raw carrots and red peppers dipped in ginger salad dressing
carrots sliced into coins, cooked for 5-10 min in butter, orange juice and a little honey
