Late coming to this thread, but as I am also PA Dutch at heart, thought I would chime in. You can't do it now, but for future reference there are two PA Dutch markets -- one in Germantown/Gaithersburg and one in Laurel that are open THurs-Sat. and have various venders. You can find homemade 'kraut there. I have to say I've had some from one of the vendors at the Laurel locale and not been all that impressed. But if you want authentic.
Am about to go grocery shopping now and pork and saurkraut are the first two items on my list (followed by potatoes, because of course you need mashed potatoes to round out the meal.) I make mine in a dutch oven. I put saurkraut in the bottom, then a little bit of brown sugar, then apple slices, then the pork, then applesauce on the top of the pork, then more saurkraut and a little more brown sugar (very little). S&P. Bake slowly for about 90 minutes. Yum!
I always make a shoofly pie for New Year's too.

I'm a huge fan of their radish curtido .

They are great. But only at Union Market Friday-Sunday. Love that place.

My family had sauerkraut on the table everything holiday meal so I get all happy whenever the subject of sauerkraut comes up!

Say no more, or we'll have to move it to the explicit forum.
