It freezes really well. I always freeze packets -- enough for a dinner of ham w/ beans and potatoes, and a weekend breakfast of eggs and ham.

I just made a killer diced ham and cheese omelette for my teenage son. The secret I use it to fry up the ham in the skillet before adding it into the egg mixture. This really enhanced the flavor. Adding onions, peppers and mushrooms is an option too, but my son isn't into this. His preference is adding hot sauce!

Ham fried rice:

Cube/chop ham into small pieces
Need several cups COLD leftover rice (at least a day old). Even better if you cooked the rice in chicken or ham stock
In a wok, briefly saute mixed vegetables (peas, corn, onions, chopped carrots, whatever). Set aside
In the same wok, saute the ham. Set aside
In the wok, scramble two eggs. Set aside.
Add some more oil to the wok and saute the rice, adding soy sauce, garlic powder, and a pinch of five spice powder (if you have a packet of fried rice seasoning, great)
One the rice is hot, add the ham, veggies, and scrambled eggs to the wok and combine.

Enjoy! My kids love this.

When I'm feeling lazy, I get a jambalaya mix, and throw cut-up ham in there.

Black eyed peas and ham:

Cut up the ham into small cubes or pieces. Save the bone if there is one.
Finely dice onion, carrots, and celery
Saute vegetables in olive oil; add crushed garlic
When vegetables are soft, add chicken stock or water or a combination of both, and black-eyed peas
Add ham bone, bay leaf, thyme, crushed red pepper flakes or cayenne, seasoning salt, black pepper, cumin, and a dash of curry powder
After about 15 mins, add the cubed ham
If you have it and like the flavor, add some coconut milk
Cook until peas are soft, but not too mushy, adjust seasoning, and enjoy with rice or alone.

Ham also freezes well. In case you have more than you care to use up now. Slice it up & put a pound in the freezer.
