Ugh, it lingers that long just with vegetable oil! I love latkes but it's so gross to step into the house 5 days later and still get a whiff of latke. It's the major reason we only do them once a year (because they're not actually that much work if you have a food processor). By the time the smell is out, no one wants to even think about them for months!

There was an article somewhere (NYT?) about how schmaltz is the new olive oil.

When I was in college, I interviewed for a babysitting job for a Jewish family. My coat smelled like fried food for weeks afterward--now I know what they were cooking!

That's why I don't deep fry. The smell lingers for days, so gross.
