Are you letting your dough soften to room temp?
Experienced spritz-er here. Do NOT make the dough ahead of time unless you have some kind of magical recipe specifically designed for spritz cookies that can be premade. IME it does not end well. You have to make the dough and immediately start gunning.
Also, do not use the plug-in, newer models. An old fashioned mechanical action press is the best bet.
If you keep having issues, and you've tried different guns, maybe it's your recipe.
