OP here, I am definitely not hating the idea.
Did I mention that FIL will be moving too? I have a great relationship with him... I wish he could just ship MIL to Europe instead of accompanying lol. Nevertheless, it's not a bad idea. Hopefully this will inspire SIL to move as well.

I think from what you have described, though, better far away than next door….
This! My MIL does live in the EU, last year she visited us for Chrismas, she stayed 3 weeks! My parents live 3 hours away, but if you add the actual number of days I see them vs MIL, i see MIL more because the visits are excruciating long.
