Pear and blue cheese salad

With dinner:

Sausage and cranberry stuffing
Orange cranberry compote
Potato casserole
Sweet potato casserole
Roasted root veggies

Corn pudding.

CORN PUDDING

2 15 3/4oz cans cream style corn, NOT drained
1 box Jiffy Cornbread mix
2 eggs (you could use egg beaters)
2/3 C milk (use skim/no fat)
1/2 C cooking oil
1 dash garlic salt (optional)

Mix together and pour in to a greased 9X12 baking pan and bake at 350 for 45 minutes (my note: it can take an hour).

My kids love it and it takes all of 3 minutes to throw together.

No recipe. Just shredded greens + sliced almonds, halved grapes, dried cranberries, finely slivered lemon peel. Maybe a small amount of quinoa if I remember to cook it ahead of time. Lemon vinaigrette with a dollop of crime fraiche or Greek yogurt for creaminess but not so much as to make it thick or heavy. My kid will not eat cooked veggies, but is happy with any sort of salad as long as its not overly dressed, so this is something I know he'll eat & that will ring crunchiness and texture to the rest of the meal.

We are having mashed celery root, green beans with shallots and lemon, stuffing with sausage, apples and chestnuts, cranberry sauce. Starting with a salad with pecans and cranberry for the first course. I got some sweet potatoes too so might do something with them because I love sweet potatoes.

I like to have at least one side that is crisp and cool to cut the rich creaminess of the rest of the meal.

Blueberry jello with whipped cream
Cherry jello with marshmallows and whipped cream
( jellos with fruit and whipped toppings are popular where I'm from )

I usually do a lighter green bean dish or cold broccoli salad. Something more acidic against all the rich dishes. I have done green beans with lemon, green beans with pomegranate and vinaigrette, and this year I'm doing green beans with bacon and cranberries.
