Roasted turkey breast, cranberry sauce, stuffing, and roasted carrots. Special treat for DH who really likes to have a Thanksgiving light dinner sometimes in the fall.

Thanks all! I decided to make a farrotto with mushrooms and sundried tomatoes. It was just the thing for a chilly evening. I appreciate all the inspiration!

It was good! And very easy...
I like the brand they sell at Trader Joe's.
It is already cooked. I grill it for a couple minutes on my Foreman grill. Toss w/ the rigatoni, olive oil, parm.
