I cut into small florets, use about a head of garlic (peeling all cloves), use a bunch of thyme pulled off the stem, coat with olive oil, add salt and pepper, and roast at 400 for about 45 mins to an hour - stirring every 15 mins. It gets good and brown from caramelization and is delicious!!!!!
