Brown the sausage, add celery, onion, mushroom, carrot, apple (whichever you have of these) and make an early thanksgiving stuffing.

I love sage sausage just formed into patties and cooked in a skillet for breakfast (or "breakfast for dinner"). Awesome with scrambled eggs, biscuits, and fruit. Or pancakes. Or, like, anything else you can think of

The pasta / meat sauce ideas sounds great too, though. Maybe a stuffed shells / manicotti type thing?

We use it with ground beef for crock pot chili after skillet browning.
