Oatmeal poster here. Not sure if this counts as a baked good, but another winner in my house winner with my toddler is quinoa broccoli bites.

I make big batches of these and freeze them in ziplock bags. They can be defrosted in the microwave.

He loves couscous though weirdly.

I also add it to granola, I soak it then add it to the oat/seed/nut mix and toast it as normal.

OP here--a lot of these recipes sound delicious, but a little sophisticated for my preschoolers. They typically won't eat anything "salad" (even pasta or potato salad) because they don't like anything with vinegar. The cheesy casserole things might work, or the oatmeal. Any good baked goods?

Cook in slow cooker for a few hours with whole milk, maple syrup and cinnamon. My toddler DEVOURS this "oatmeal."

I'm planning to add apples or bananas to my next batch.

I had a delicious quionoa salad from the whole foods deli and found this recipe online that is spot on:

Copycat Whole Foods California quinoa salad recipe
Serves 6

Ingredients:
For the salad


2 cups cooked quinoa
2 large fresh mangoes, diced
1/2 medium red onion, diced
2 red bell peppers, diced
1 small handful cilantro, roughly chopped
1-1/2 cups shelled edamame
1/2 cup organic raisins
1/2 cup slivered almonds
1 cup shredded unsweetened coconut
For the dressing

2-3 limes, juiced
1/4 cup balsamic vinegar
1-2 teaspoons agave or honey (depending on desired taste)
Salt and pepper to taste
Directions:
In a large bowl, add the cooked quinoa and all of the remaining ingredients for the salad, mixing well.
In a small bowl, add the fresh lime juice, balsamic, agave and season with salt and pepper and mix well.
Pour the dressing over the salad and toss very well. Serve immediately or keep chilled until ready to enjoy.

This is so GOOD!

1 cup dry quinoa
2 cups water

In a pot, heat olive oil, add quinoa and toast it. You will smell it and hear it popping. Don't over do it. Have it brown just a little.
Add water, salt and cumin to taste. (I do the seeds and grind them in a mortar and pestle, MUCH more flavor)
Bring to boil, cover, simmer 15 min.

LET COOL

Add:

Feta,
Chickpeas,
Whatever veggies you like (roasted green beans or asparagus or sauteed kale, or sun dried tomatoes)
Lots of lemon juice
Lots of fresh, chopped parsley

You can also add chicken if you'd like. I have seen kids eat this and like it! I think the key to quinoa is toasting it first, personally!

Barbeque chicken bowls

Quinoa, chicken, barbeque sauce plus whatever is on hand of:

Avocado, black beans, cheese, corn, onion, tomatoes etc

Let kids mix toppings. They like it better this way.

Cook it in a pressure cooker. It is a game changer. I will eat it no other way.
