This is so GOOD!
1 cup dry quinoa
2 cups water
In a pot, heat olive oil, add quinoa and toast it. You will smell it and hear it popping. Don't over do it. Have it brown just a little.
Add water, salt and cumin to taste. (I do the seeds and grind them in a mortar and pestle, MUCH more flavor)
Bring to boil, cover, simmer 15 min.
LET COOL
Add:
Feta,
Chickpeas,
Whatever veggies you like (roasted green beans or asparagus or sauteed kale, or sun dried tomatoes)
Lots of lemon juice
Lots of fresh, chopped parsley
You can also add chicken if you'd like. I have seen kids eat this and like it!

I think the key to quinoa is toasting it first, personally!
