OP here-tried that. Learned quinoa do not make patties that stick together even with egg and breadcrumbs. Next time I'll try adding ground beef. Otherwise, your recipe sounds quite yummy. Your quinoa is bitter because it wasn't rinsed well enough before cooking. Quinoa has a bitter, soapy-tasting coating that is water soluable, but you have to rinse it thoroughly..
Use a fine-meshed sieve to rinse. Alternatively, you can buy pre-rinsed quinoa.
Yes, you're the only person who knows quinoa needs to be rinsed well. Some people just have more sensitive palates.
