Genius! I'm going to add this to my list of uses for leftover rotisserie chicken.

How do you even have leftover rotisserie chicken?

I am the green curry PP. We don't care for breast meat sans seasonings or sauce.

How do you even have leftover rotisserie chicken? We've got 4 in our family - 4 yr. old twins - and we can easily finish a whole chicken in one meal....

We always have left overs (5.5 yo, 3 yo, my husband and myself). We aren't big meat eaters (and my husband doesn't like dark meat) so there is always plenty to pick off the carcass after the meal. All that really close to the bone meat is the most juicy anyways. It's enough for a chicken salad or enchiladas if you add lots of veg to that next meal too.

I love it with white rice (cooked in chicken broth), black beans and avocado. My most favorite meal of all time.

Ha ha. That's what I do with the leftovers too! DH thinks it's an impressive meal. LOL.
