There are several BBQ trucks that has traditional sides. I'm a clueless Midwesterner. Is M+3 just BBQ and 3 sides like Mac n Cheese or Cole slaw or corn? Then the type of meat and style of sauce varies by region?
Not OP, but in the UK, meat & 2 (3) veg is usually something like roast beef with potatoes, peas, carrots. Or chicken with potatoes and green beans and ... well, I don't know, we just had 2 veg.

Also, mac n cheese is not a side, where I'm from. It's a meal. Although cauliflower cheese is a side--I guess that's what goes with the chicken and potatoes and green beans?
Sauce: HP or ketchup, from memory.
Meat and 2(or 3) is basically the Southern version of a blue plate special with 4-5 sides to choose from.
Monday : Meatloaf. Veggie options mac and cheese, greens, okra, green beans, sweet potatoes
Tuesday: Catfish. Veggie options succotash, mashed potatoes, baked potatoes, stewed carrots, green beans
Wednesday: Fried chicken (etc...)
Thursday: Chicken and Dumplings (etc...)
ETC. ETC.
