Trader Joe's has some decent meat substitutes. I agree it is best to keep them down to 1-2 times a week. I'm vegetarian but the rest of the family is not. Some easy dishes to do for both are pasta with white beans or chickpeas for him, meat for you (or throw an egg on top if he eats eggs); tacos with meat for you and vegetarian refried beans for him; and stir fries with meat for you, tofu for him. For veggie meals that everyone can enjoy, consider curries with veggies or chickpeas, fritattas, and lentil vegetable soups or stews.
