OP here, thank you for all the advice!! I'm so proud of myself, it turned out delish!!!

I had a 6.8 pound oven stuffer roaster (perdue).. I followed the directions exactly (including flipping the bird).. and the only deviation was I let it cook about 15-20 minutes longer than the recipe called for. I do have a fancy digital therm that I rely on, so that was my guide. The chicken was so tender and moist, and the combo of veggies was perfect. I may have cut the red potatoes a little too big, even after almost 2 hours in the oven, they could have used a little more time. But everything else was perfect.

ALso --I used olive oil.. and there was no smoking at all. And the popper never popped, and my breast was at 170 when I pulled it out.
